This makes a delicious supper dish. I use turkey in this recipe as it is a lean meat which is high in protein and very low in fat which is great for weight loss.
Serves 2-3
Ingredients:
225g turkey mince
1 onion, finely chopped
4 garlic cloves, crushed
1 large carrot, grated
1x 400g tin of tomatoes
500ml stock
2 tbsp coconut oil
1 red chilli, deseeded and finely chopped
Sea salt and pepper
300g courgetti spaghetti
Method:
Heat the coconut oil in a large casserole dish, add the onion and garlic and gently cook for 2-3 minutes.
Add the turkey mince and chilli, turn up the heat and fry for a further 2-3 minutes until lightly browned.
Add the tomatoes, carrot and stock, bring to the boil then simmer for 30-35 minutes. Taste and adjust the seasoning if necessary.
Serve in bowls with courgetti spaghetti (it tastes great raw). Enjoy!
* Serve with butternut squash noodles if you are really hungry
** Why not make the night before then just reheat when you walk through the door after a long day at work?
***Double or triple this recipe and freeze ahead in batches so you have a meal for another time!
