Savoury breakfasts are a great way to start the day to stablise energy levels and avoid all the hidden sugars that are often found in many breakfast cereals.
Full of fibre, protein, essential fats, vitamins and minerals, especially beta-carotene.
A delicious breakfast, full of goodness and taking you only 2 minutes to prepare.
Serves 1
Ingredients:
1 slice of seeded rye bread (or bread of your choice)
2 tbsp of hummus
1½ tbsp pesto
1 tbsp extra olive oil
½ carrot, grated
½ avocado, sliced
¼ red onion, finely sliced
A squeeze of lemon juice
A handful alfalfa sprouts (or any other sprouts / leaves)
1 tbsp pumpkin seeds
Sea salt and pepper
Method:
Toast the bread, spread a tablespoon of pesto in a thin layer and add the hummus on the top. Top with the sliced onion and arrange the slices of avocado on top. In a bowl, mix the lemon juice with the carrot and half the pumpkin seeds, then spoon onto the toast along with the rocket and alfalfa sprouts.
Season well and sprinkle with parsley and seeds. Add the olive oil to the remaining pesto and then drizzle over the top.
